Komon Nuka is one of the ingredients in Nori Paste (Japanese Rice Paste Resist). Its role is to reduce the elasticity of the rice flour in order to make the nori paste easier to handle.

Komon Nuka is defatted rice bran (also called rice polish powder). Take care not to confuse this with the regular rice bran easily found on the shelf of Asian food stores.

We have a new source of komon nuka, which works well with our recipe. For the smoothest nori paste, we would suggest first sifting the bran with a fine flour sieve. Any larger granules can be ground to a finer powder with a mortar and pestle or grain grinder.
